Feta Olive Mediterranean Salad
3 ½ cups cucumbers thinly sliced
2 tsp. sea salt
2 Tbs. green onions, minced
1 Tbs. Epicurean 25 Star Balsamic Vinegar
6 Roma tomatoes cut in quarters
½ cup Feta cheese
5 oz Epicurean’s Kalamata Olives
3 Tbs. Epicurean Italian Herb Extra Virgin Olive Oil
Combine cucumber and sea salt tossing well.
Let stand at room temperature for 20 minutes, drain and squeeze dry.
Combine remaining ingredients and serve.
