Jalapeno Dijon Grilled Chicken


3 lbs chicken thighs

2 garlic cloves, pressed

2 Tbs Epicurean Jalapeno Extra Virgin Olive Oil

4 Tbs dijon mustard

2 Tbs honey

2 Tbs salt

1 Tbs fresh rosemary, chopped

1 tsp black pepper

1 lemon


Combine all ingredients, except lemon, in a bowl

Marinate chicken for 2 to 24 hours in the refrigerator.

Grill chicken thighs between 7-10 minutes per side.

Use a meat thermometer to ensure chicken is cooked to at least 175 degrees.

Place cooked chicken thighs in aluminum foil and squeeze the lemon over the chicken.

Close the aluminum foil and let steam with the lemon juice for about 10-15 minutes.
