Island Rice


4 cups cooked white rice

1 can black beans, drained and rinsed

½ cup cilantro, chopped

2 cups grilled fresh pineapple, chopped*

¼ cup scallions, sliced thin

2 tbsp. Epicurean Coconut Balsamic Vinegar (or more to taste)

¼ cup of Epicurean Lime Extra Virgin Olive Oil

Finish with Himalayan Pink Sea Salt



Combine all ingredients, except for the sea salt, in a large bowl.  Stir.  Finish with salt for added flavor.


*Note: To grill pineapple, place whole (FRESH) pineapple rings on the grill over medium heat and grill for a couple of minutes per side.  Chop after grilling
