Baked Tomatoes with Pesto

Serves: 6


Ingredients

  • 6 medium, tomatoes - ripe and firm
  • salt and freshly ground pepper to taste
  • 6 tablespoons, pesto

Method

  1. Preheat oven to 425 degrees
  2. Oil a baking dish that will snugly accommodate the tomatoes
  3. Core the tomatoes, shave small amount off bottom to level tomatoes on baking surface
  4. Season inside of tomatoes with salt and pepper
  5. Place spoonful of Pesto into each core
  6. Place in oven and bake for 20 minutes, until the surface of the Pesto is just beginning to color
  7. Remove from oven
  8. Serve warm or one to two hours after baking.
