Bacon Cheese Muffins

Ingredients

  • 2 cups all-purpose flour 
  • 1 cup shredded cheddar cheese
  • 2 Tbs sugar
  • 3 tsp baking powder
  • ¼ tsp salt
  • 1/8 tsp garlic powder
  • 1/8 tsp lemon-pepper seasoning
  • 1 egg
  • 1 cup milk
  • 2 Tbs, Epicurean Extra Virgin Olive Oil (unflavored or any flavor to kick it up a bit)
  • 2Tbs, Epicurean Bacon Infused Olive Oil

 

Instructions:

Preheat oven to 400 degrees.

In a large bowl, combine the first 8 ingredients. In another bowl, whisk together egg, milk, Epicurean Bacon Infused Olive Oil, and Extra Virgin Olive Oil.

Fill greased muffin cups two-thirds full.

Bake at 400 for 15-20 minutes or until toothpick comes out clean.

Cool pan for 5 minutes on a wire rack before removing muffins. Serve warm and refrigerate leftovers.
